If you're shopping for a serious offset smoker, you've hit the question fast: traditional offset or reverse flow? Both cook excellent barbecue. They just move heat and smoke differently — and the right one for you comes down to how you like to cook and, more than anything, how the pit is built.
How a traditional offset works
On a traditional offset smoker, the firebox sits off to the side and opens directly into the cook chamber. Heat and smoke enter at one end, roll straight across your food, and exit out the stack at the far end. That's the classic sidebox design that built Texas barbecue.
The trade-off people bring up is heat distribution — the end nearest the firebox runs hotter than the far end. But here's what a lot of folks miss: a properly designed smoker greatly reduces that hot spot near the firebox, which gives you more usable real estate in your cook chamber. And if a pit does run a little warmer up by the firebox, plenty of cooks just work with it — rotating their meat through the cook, or setting whatever they want cooked hotter and faster a little closer to the fire. But good design can eliminate the hot spots to begin with. That's what you get with a Legacy smoker.
The traditional offset is also known for a bark and flavor profile that a lot of pitmasters feel reverse flow just doesn't match. A big part of that likely comes down to how the heat and smoke move: on a traditional offset, they come straight in from the firebox, across your food, and straight out the stack — one clean pass over the meat.
How a reverse-flow offset works
A reverse-flow smoker adds a steel baffle plate under the cook chamber — sometimes solid, sometimes perforated. The heat and smoke leave the firebox and have to travel under (or through) that plate to the far end of the pit, then rise up and come back across your food, exiting out a stack mounted on the firebox side of the smoker rather than the far end like a traditional offset. That extra pass, plus the baffle's thermal mass, evens out the temperature across the cook surface — which is the main reason people run them.

So which should you choose?
Here's the honest answer most builders won't give you: build quality matters more than the layout. A heavy, tight, well-built traditional offset will out-cook a thin, leaky reverse flow every day of the week — and a good reverse flow will run circles around a cheap offset that bleeds heat everywhere.
If you love being hands-on with your fire — running a hot end for color and sliding meat to a cooler zone to finish — a traditional offset is hard to beat. If you'd rather load the chamber and hold a rock-steady temperature from end to end, reverse flow has real appeal.
